Chunky Veggie Chilli

1 onion
2 carrots
2 peppers (red or yellow)
2 garlic cloves
2 tbsp olive oil
2 x 400g can of beans (we used kidney and cannellini beans)
2 x 400g can of plum tomatoes

2 tsp cumin
2 tsp coriander
2 tsp dried oregano
Optional: Lemon juice to taste and fresh coriander to serve


Step 1

Chop the onion, carrots and pepper. Crush the garlic cloves.

Heat some olive oil in a large saucepan. Add the chopped vegetables. Cook under medium heat for 8-10 mins until the vegetables are soft.

Step 3

Rinse and drain beans. Add to vegetable mix alongside the plum tomatoes, spices and herbs. Stir together. Cook under medium heat covered for around 20 mins, stirring from time to time so that the chilli does not stick to the pan.

When done season to taste with lemon juice. Serve with fresh coriander on top.
