450g lean minced lamb
1 large carrot
3 spring onions
1 clove garlic
50g fresh wholemeal breadcrumbs
2 tsp tomato paste
1 dessert spoon of mint
1 dessert spoon of coriander
Grate the carrot, finely slice the spring onions, crush the garlic and roughly chop the mint and coriander and place all the ingredients together in a large bowl.
Mix together with a wooden spoon, until all the ingredients are thoroughly combined. Cover with cling film and place in the fridge for 30 minutes. When the mix is cool and you are ready to cook, shape the mix into kofta shape pieces suitable for your little one to pick up and eat.
To cook, place the kofta under the grill for 10-15 minutes until they are cooked through and golden in colour.
