Sweetcorn Fritters Recipe
80g of self-raising flour
1 tsp of baking powder
90ml of whole milk (or dairy free plant based alternative)
1 egg (or 1 tbsp of ground flax and 2 & half tbsp of water)
1 tin of sweet corn (drained)
30g of grated cheese (optional)
Sieve flour into a medium-sized bowl along with 1 tsp of baking powder.
In a separate bowl mix the egg and milk together. Then add to flour and mix well until you create a smooth thick texture for these healthy sweetcorn fritters.
Add the sweetcorn along with grated cheese if you are using.
Heat a drizzle of oil over a medium heated pan. Add 1 tbsp of batter to the pan to form a small round sweetcorn fritter.
Cook for 4-5 minutes each side until lightly golden. Then serve these healthy sweetcorn fritters and enjoy.
