Baby Omelette Fingers Recipe
3 Medium eggs
3 Small broccoli florets
Handful of fresh spinach leaves (washed)
4 Baby tomatoes (sliced)
50ml of milk
40g of grated cheese
Preheat the oven 200°C / fan 180°C. Add broccoli florets and spinach to a saucepan of boiled water then simmer for 2 minutes and drain.
Whisk the eggs and milk together then pour into a small baking dish.
Add broccoli, spinach, sliced tomatoes, half the grated cheese and stir well. Sprinkle remaining cheese on top and bake the baby omelette fingers for 20 minutes until lightly golden in the centre of oven.
Remove the baby omelette from the oven and allow to cool, once cooled slice into 8 mini omelette fingers and enjoy.
