Baby Pesto Pasta
40g of fresh basil
1 clove of garlic (minced)
40g pine nuts
30g freshly grated Parmesan
50ml olive oil
3 tbsp. of water (optional)
250g pasta (can be gluten free)
Add the basil, minced garlic and pine nuts along with freshly grated Parmesan to a food processor or blender, and pulse.
Once combined add olive oil and blend again until a smooth creamy texture is created. Add water if needed to create a smoother baby pesto.
Meanwhile fill a medium saucepan with water and bring to boil over a high heat. Add chosen pasta and cook according to packet instructions.
Drain the pasta and stir in the baby pesto sauce immediately- serve and enjoy!
