  • How to make

150g cherry tomatoes
Small handful fresh coriander
Small handful fresh parsley
¼ red onion
3 tbsp cooked sweetcorn
1 small garlic clove
2 tsp lemon juice

Step 1

In a blender or food processor, blitz all the ingredients together very lightly on a pulse setting (or on and off) until you get a rough textured salsa. Be careful not to over blend as the tomatoes can release quite a lot of water. If this does happen, simply drain off some of the excess liquid before serving. For a smoother texture you could also try blending the other ingredients first then adding the tomatoes at the end

Step 2

You can alternatively very finely chop all of the ingredients by hand and mix together

Recipe notes

Serve with raw or steamed vegetables and Organix Goodies breadsticks. Adults could also add a little fresh chopped chilli to their portion if they fancy a spicy alternative.

You could also try roasting the tomatoes first for a slightly different flavour if you like.
