275g canned sweetcorn
1 garlic cloves
Half small red onion
2 tbsp coriander
100g plain flour
2 large eggs
100ml vegetable oil for frying
Ground black pepper
How to make
Step 1
Drain the sweetcorn and place half into a blender and blend until smooth
Step 2
Finely chop the garlic and onion and add with the pepper and coriander to the mixer and blend to a purée
Step 3
Add the flour and eggs then blend for another minute
Step 4
Scrape the mixture into a bowl and fold through the remaining sweetcorn
Step 5
Heat a little oil in a frying pan, drop a spoonful of the batter into the oil, then repeat the process until you have 3-4 patties frying at once
Step 6
Once golden on one side flip, over and cook other side until golden
