Spring Rolls

  • How to make

1 clove of garlic
A drizzle of sunflower oil
A thumb-size piece of ginger
2 spring onions
A pinch of red chilli
Handful of cabbage
4 shiitake mushrooms
A handful of beansprouts
Small handful of coriander
1/3 red pepper
1 tsp lime juice

For the outer spring roll:

4 sheets of filo pastry
2 tbsp sunflower oil
1 tbsp butter

For the dipping sauce:

2 tsp honey
1 lime juice
A large pinch of coriander
1 spring onion

Step 1

Preheat the oven to 180°C

Step 2

Mince the garlic, grate the ginger, slice the spring onions into matchstick pieces, finely chop the chilli, finely shred the cabbage, slice the mushrooms, chop the coriander and finely slice the red pepper

Step 3

Combine all the spring roll filling ingredients in a bowl (apart from the coriander and lime juice)

Step 4

Heat up a wok until really hot and pour in a drizzle of oil

Step 5

Add all the ingredients from the bowl and stir fry for a few minutes until they begin to soften (do not overcook, leave them slightly crunchy as they will be cooked in the oven). Add the lime juice and coriander and remove from the heat

Step 6

Wait for the mixture to cool before making into spring rolls

Step 7

To make the spring rolls, turn the sheet of filo pastry so the long edge is facing you, cut in half vertically

Step 8

Place a small amount of filling at the end of the filo pastry closest to you

Step 9

Oil around the edges of the pastry

Step 10

Fold away from you once to cover the filling

Step 11

Fold in the sides along the length of the pastry and roll up the spring roll

Step 12

Brush with oil and place on a baking tray

Step 13

Repeat with the rest of the mixture

Step 14

Bake in the oven for 8-10 minutes or until golden, alternatively you can freeze them and cook at a later date

To make the dipping Sauce:

Step 1

Chop the coriander, juice the lime and finely chop the spring onion

Step 2

Combine all the ingredients in a bowl, adjust to taste
