
Salmon, Butter Beans & Tomatoes

1 salmon fillet
2 tbsp butter beans
16 cherry tomatoes
How to make
Step 1
Make sure there are no bones in the fish. Place the fillet on a piece of foil and wrap into a parcel
Step 2
Wash the cherry tomatoes and place on a small baking tray
Step 3
Place the fish parcel and tomatoes in the oven (190c or Gas 5) for 15-20 minutes until the salmon is fully cooked
Step 4
Leave the fish until it is cool enough to handle and remove the skin
Step 5
Flake the fish into a small bowl checking there are no bones. Add the tomatoes and butter beans and use a fork to mash everything together . For a smoother recipe, use a blender and puree the mixture

If the mixture is too thick, add some full fat milk.
