  • How to make

For the pears:

Knob of butter
1 tbsp (20g) honey 
Splash of water
2-3 ripe pears

For the cake:

40g unsalted butter
5 tbsp (100g) honey
1 egg
180g self raising flour
1tsp bicarbonate of soda
100mls buttermilk

Step 1

Preheat your oven to 180°C / 160°C fan / gas mark 4 and grease a 20cm round cake tin with the knob of butter (or similar sized glass/ceramic baking dish)

Step 2

Mix the water with the honey to loosen the honey then pour into the cake tin

Step 3

Core and slice the pears, then arrange evenly on top of the honey

Step 4

In a mixing bowl, beat the butter, honey and egg together with an electric whisk

Step 5

Mix all dry ingredients together in a small bowl, then sieve into the creamed mixture a little at a time, adding some of the buttermilk after each addition

Step 6

Spoon the cake batter over the pears then bake for approx. 30-35 minutes or until a knife inserted into the cake comes out clean. Check the underneath to make sure the top is cooked!

Step 7

Remove from the oven, allow to cool for a few minutes and then turn onto a serving platter
