- How to make
2 dried apricots
50g oats (gluten free if preferred)
1 tbsp sunflower seeds
50ml milk of choice
1 fresh orange
How to make
Chop the dried apricots into bite size pieces and add to a bowl with the oats, seeds and milk. Stir to combine
Cover and leave in the fridge over night
At breakfast, slice the fresh orange and arrange on top of the oaty mixture before serving. Add a drizzle of maple syrup when serving if you if you wish
Soaking the oats and seeds over night not only makes this a quick and convenient breakfast, it also makes it far more digestible, great for little ones.
Play with different dried fruit combinations such as raisins or goji berries. You can also add other toppings such as toasted coconut flakes, pumpkin seeds, flaxseeds or chopped nuts for older children. (Make sure nuts are well chopped to avoid any risk of choking).
