  • How to make

6 tbsp sunflower oil
2 large eggs
250ml fresh apple juice
150g self-raising flour
1.5 tsp baking powder
150g rolled oats
75g raisins (or we used Organix Goodies raisins)
80g Wensleydale cheese
200g Cox apples

Step 1

Peel and core the apples and grate the cheese

Step 2

Preheat the oven to 200°C / 400°F / Gas Mark 6 and line a 12-hole muffin tin with 12 paper cases

Step 3

Place the oil, eggs and apple juice in a large jug or bowl and beat lightly to combine

Step 4

Sift together the flour and baking powder in a large bowl, and then add the oats, raisins and 60g of the grated cheese

Step 5

Coarsely grate the apple, then add this to the dry ingredients and mix together thoroughly

Step 6

Make a well in the centre of the dry ingredients and pour in the liquid mixture. Stir together gently until just combined, don't over mix

Step 7

Spoon the mixture into the muffin cases and then sprinkle the remaining cheese on top

Step 8

Bake in the preheated oven for around 20 minutes, or until risen and golden brown and firm to the touch

Step 9

Leave to cool in the tin for about 5 minutes, then either serve warm or transfer to a wire rack to cool
