  • How to make

1 courgette
1 red pepper
Approx. 20 cherry tomatoes
Olive oil
Dried oregano / mixed herbs (optional)
½ a cooked chicken breast

Step 1

Pre-heat your oven to 200°C / 180°C fan / Gas Mark 6, then slice the courgette into discs, cut the red pepper into similar sized chunks, and cut the tomatoes in half

Step 2

Drizzle the vegetables with a little olive oil, sprinkle with herbs (if using) and roast for approx. 30-40 minutes until nicely cooked 

Step 3

Cut the cooked chicken into bite size pieces, then add to the roasting tin for the last 10 minutes of cooking – ensure chicken is piping hot 

Step 4

Mix everything together. This can be served chunky as it is for older children, or mashed or blended to a suitable consistency for younger babies

Recipe notes

If you heat the chicken separately then you can mash or blend the remaining roasted vegetables and use as a sauce for pasta or potatoes. This can be served to the rest of the family, perhaps alongside more cooked chicken.
