
Lamb Kofta

450g lean minced lamb
1 large carrot
3 spring onions
1 clove garlic
50g fresh wholemeal breadcrumbs
2 tsp tomato paste
1 dessert spoon of mint
1 dessert spoon of coriander
How to make
Step 1
Grate the carrot, finely slice the spring onions, crush the garlic and roughly chop the mint and coriander
Step 2
Place all the ingredients together in a large bowl
Step 3
Mix together with a wooden spoon, until all the ingredients are thoroughly combined. Cover with cling film and place in the fridge for 30 minutes
Step 4
When the mix is cool and you are ready to cook, shape the mix into kofta shape pieces suitable for your little one to pick up and eat
Step 5
To cook, place the kofta under the grill for 10-15 minutes until they are cooked through and golden in colour

Mix a few dessert spoonfulls of Greek yogurt with some chopped coriander, mint and some finely diced cucumber to make a tasty dressing, perfect for dipping.
