  • How to make

1 small onion
½ tsp mild curry powder
1 tbsp unsalted butter
1 fillet cooked, line caught white or oily fish (such as haddock or mackerel)
64g (a handful) of baby spinach leaves
1 egg
80g white rice
2 cardamom pods

Step 1

Dice the onion and wash the spinach leaves

Step 2

Hard boil the egg - chop into about 8 pieces once cooked

Step 3

Cook the rice in simmering water with the cardamom pods until the rice is tender

Step 4

Melt the butter in a large pan and add the onion and sauté over a low heat for about 5 minutes until the onion is soft and has absorbed the butter

Step 5

Add the curry powder and continue to sauté for another minute

Step 6

Add the spinach and allow it to wilt, before adding the rice (make sure the cardamom pods have been removed) and stir until the rice is a nice yellow colour

Step 7

Carefully remove any skin and bones from the cooked fish fillet, then flake with a fork

Step 8

Add the fish, give it all a good stir and then serve with the pieces of chopped egg on top. If your little one isn't quite ready for the texture of this recipe, you can blend or mash down to suit them.
