  • How to make

For the compote:

4 ripe plums
½ tsp ground cinnamon
1 clove
1 tsp vanilla extract
3 tbsp water

For the French toast:

4 slices of fruit bread
1 tsp vanilla extract
2 eggs

Step 1

Chop the plums into a small bite size pieces. Put all ingredients into a small saucepan and cook until the fruit is softened and cooked down

Step 2

In a bowl, beat together the egg, vanilla and a little cinnamon

Step 3

Pre heat a pan with a little sunflower oil

Step 4

Take two slices of bread, spread one with the plum compote then place the other on top to make a sandwich. Dip into the egg mixture coating both sides

Step 5

Place in the hot pan to cook until golden on one side then flip over to cook the other side. When golden remove from the pan and cut into fingers
