Wet ingredients


2 ripe bananas (riper bananas are sweeter)
4 tbsp maple syrup
4 tbsp coconut oil, vegetable oil or butter
2 eggs
1 tsp vanilla extract
250ml milk of your choice (whole cows milk, coconut, almond etc.)
Optional: zest and juice of 1 orange – see alternative version
 

Dry ingredients


200g oats
150g fresh / frozen (defrosted) cranberries
Small handful raisins (or dried cranberries if you prefer)  

Step 1

Blend together all wet ingredients in a blender until completely smooth. (If you don’t have a blender, mash bananas into a puree then whisk with all other wet ingredients)

Step 2

Place oats into a baking dish approx. 30cm x 20cm. Pour the wet mixture over and stir to mix completely, then stir through the raisins and cranberries

Step 3

Bake for approx. 30 minutes until golden and set

It’s good to introduce children to tart and bitter flavours to increase their palate. However if your little one finds this recipe too tart you can add some natural sweetness with the addition of the zest and juice of 1 orange. Orange and cranberry really complement each other

Step 1

Simmer cranberries with the orange zest and juice and the raisins in a saucepan over medium-low heat for approx. 10 minutes or until the cranberries pop

Step 2

Allow it to cool slightly, then blitz in a blender until sauce is thick and smooth. Then simply swirl this through the creamy oat mixture. You can create a beautiful marble pattern with the two colours. It takes a little longer but will be sweeter for little taste buds
