Chinese Salmon & Veggie Rice

  • How to make

120g long grain rice
1 tbsp olive oil
½ onion
1 carrot
½ red pepper
½ tsp ground 5 spice
½ tsp ground ginger
250g salmon fillets
2 handfuls of frozen peas
2 handfuls of beansprouts
½ lemon juice (optional)

Step 1

Cook the rice until tender, as per instructions on the packet

Step 2

Heat the oil in a frying pan or wok

Step 3

Slice the onion finely and add to the hot pan. Fry until cooked

Step 4

Peel the carrot. Chop the carrot and red pepper into small cubes, approx. 5mm in size

Step 5

Add the carrot and red pepper to the pan with the ginger and 5 spice. Place the lid on the wok/pan and sauté the vegetables until the carrot is soft

Step 6

Add the whole salmon fillet to the wok/pan, place the lid back on. Cook for 5 minutes over a medium heat

Step 7

Turn the salmon fillet and add the frozen peas and beansprouts. Cook for a further 5 minutes

Step 8

Flake the salmon into manageable flakes. Stir in the rice, add the lemon juice and cook for a further 2 minutes
