2 onions
2 sprigs fresh rosemary
4 sprigs of fresh thyme
2 cloves of garlic
1 large parsnip or ¼ of a swede
4 large carrots
1 leek
4 chicken thighs - skin and bone on
Drizzle of oil for cooking
1 tsp turmeric
2 tsp ground coriander
2 tsp paprika
2 tsp garam masala
500ml water (approx.)
2 tins chopped tomatoes
2 tbsp tomato puree
1 large handful of kale

Step 1

Prepare all your vegetables (this is the most labour intensive part of this dish, once you get everything in the pot, you can leave it to cook). Finely chop the onion and fresh herbs, and crush the garlic. Dice the parsnip, carrots and leek. There is no need to peel the vegetables if they are organic, just scrub them clean

Step 2

Seal the chicken thighs for a couple of minutes in a large casserole dish on the hob over a medium to high heat, with a small drizzle of oil. Once lightly browned remove from the pan to a plate

Step 3

Add a drizzle more oil to the pan and sauté the onion for about 5 minutes until soft. Add the garlic and spices and then add the chicken back into the pot and stir to coat

Step 4

Add in the chopped vegetables, (except the kale) the tinned tomatoes and tomato puree, then cover with water. Add enough water so everything is just submerged

Step 5

Bring to a gentle boil, then reduce to a low simmer and cook with a lid on for 30 minutes, then without the lid for another 30 minutes, or until the liquid has reduced and become thick 

Step 6

Shred the kale leaves and add to the pot for the last 5 minutes of cooking to allow them to wilt

Step 7

Carefully remove the 4 chicken thighs from the pot with a large slotted spoon. Place on a chopping board and remove skin and bones and chop meat into bite size pieces. Add the chopped chicken back into your stew pot and serve

Step 8

Adjust the piece size of the chicken and veg to suit your little one, or this stew can be mashed or pureed for younger babies
