  • How to make

½ a small onion
½ an aubergine
1 tbsp olive oil
¼ tsp ground coriander
½ tsp ground cumin
120g tinned chopped tomatoes
4 tbsp water
100g cooked tinned chickpeas
2 handfuls of baby spinach

Step 1

Peel and finely chop the onion, chop the aubergine into 2cm cubes

Step 2 

Heat the oil in a small pan over a medium heat, then fry the onion and aubergine for about 3 minutes.  Add the spices and cook together for a further minute

Step 3 

Add the tomatoes, water and chickpeas and bring to the boil, then cover and simmer for 10 minutes

Step 4 

Wash and chop the spinach then add to the pan and cook for a further 2 minutes

Step 5 

Roughly mash or puree the mixture to the right texture.  You may need to add a little extra water if too thick
