Apple & Cinnamon Muffins

3 tbsp maple syrup
2 tsp cinnamon
120ml olive oil / coconut oil
150g self-raising flour (gluten free if you prefer)
How to make
Preheat oven to 200°C (180°C fan-assisted), gas mark 6
Whisk the eggs with the maple syrup, cinnamon and olive oil (or gently melted coconut oil). Grate the apples and stir into the egg mixture. Then fold in the self-raising flour with a metal spoon
Spoon into greaseproof muffin tins, and bake for approx. 20 minutes, until golden and cooked in the centre. Stick a knife in the centre of a muffin to check they are cooked – it should come out clean
You can add chopped nuts or seeds for older children, or add dried fruit for added sweetness and texture.
Why not get little ones involved in the kitchen? They can grate the apple, weigh flour and stir the ingredients together.
Baking is a little trickier to get experimental with – as the consistency of things makes quite a difference to the end result. However you could try varying the fruit and spice in these little muffins along with the season, and see what result you get. The base recipe is fairly reliable – so most fruits should work. Try pear and ginger or banana, walnut and fig, or perhaps raspberry and orange zest! If the fruit is a lot wetter than the original grated apple (like mashed banana might be), you can reduce the oil by a few ml or increase the flour a little, play around.
