Peanut Butter Gummy Cookies

Ingredients

1 ripe banana (overripe is fine)
50g crunchy peanut butter (one that is made from 100% peanuts with no added sugar or salt)
1 tbsp milk
1 tbsp maple syrup 
¼ tsp vanilla extract
100g rolled oats
20g plain flour
2 packets of Organix Gummies (whichever flavour you prefer), cut into halves

Method

Step 1

Preheat the oven to 180°C / 350°F / Gas Mark 4. In a large bowl, mash the banana with a fork until smooth.

Add the peanut butter, milk, maple syrup and vanilla, and mix well. Add the oats, flour and Gummies, then stir until combined.

Place approx. 12 evenly sized spoonful’s of the mixture onto an ungreased baking tray, place well apart, then press down on each one to squash slightly.

Bake in the preheated oven for about 12-15 minutes, then leave to cool on the baking tray. The cookies should be crunchy on the outside with a slightly cake like texture in the middle.
