Apple & Red Cabbage Coleslaw
½ Bramley apple
½ small red cabbage
2 spring onions
110g crème fraiche
⅓ tsp Dijon mustard (optional)
½ lime juice
A handful of raisins
Peel the carrot, grate and add to a large bowl. Wash the apple, core, peel and grate. Add to the carrot.
Slice the red cabbage and spring onion very finely. Add to the bowl with the dried apples and raisins.
In a separate bowl, mix the crème fraiche, mustard and lime juice. Stir into the vegetables.
Store in the refrigerator for up to 3 days.
