A great organic cheese and tomato sauce for pasta

Recipe Ingredients:
1 tsp organic olive oil
half a small organic onion, finely chopped
1 small organic carrot, peeled and finely chopped
a very small pinch organic ground parsley
1 organic bay leaf
125ml (4fl oz) organic sieved tinned tomatoes or passata
2 tbsp water
2 tsp grated organic cheddar cheese
1 tbsp small organic pasta shapes (stars, alphabets etc)

125ml (4fl oz) organic sieved tinned tomatoes or passata
2 tbsp water
2 tsp grated organic cheddar cheese
1 tbsp small organic pasta shapes (stars, alphabets etc)
Recipe Method:
Step 1 -Heat the oil in a small pan over medium heat and lightly fry the onion and carrot until soft, about 5 minutes. Set aside half of the mixture.
Step 2 -Add the parsley, bay leaf, tomatoes or passata and water. Cover and simmer for 10 minutes, stirring occasionally to prevent sticking. Remove from the heat, add the cheese and stir well.
Step 3 -In a separate pan, cook the pasta according to the directions on the packet and drain well.
Step 4 -Remove the bay leaf, then puree or roughly mash the tomato and cheese mixture.
Step 5 -Add the drained pasta and reserved vegetable mixture and mix well. Add extra water if a thinner consistency is preferred.
